URL scheme. Every doc lives at <category>/<client>/<document>/<date>/, and …/latest/ always points at the newest version. So client/northstar/record-video/latest/ works without knowing the date, and old dates stay readable forever.

Adding a doc: create that folder with an index.html, point latest at it, then add one entry to docs.json. No build step.
